Healthy Chipotle Arroz con Pollo

During the Advocare Challenge I've had to get really creative about the food I eat.  Getting bored is one of the biggest reasons for falling off the wagon and ain't nobody got time for that!  I've been using the Advocare recipes and making my own recipes to fit in the healthy eating plan.  I love cooking so this has been a fun adventure... oh, and Pinterest helps!  This is a relatively quick meal for those on the go!


Healthy Chipotle Arroz con Pollo (Chipotle Chicken and Rice!)

1 lb of chicken breasts- sliced thinly
1 large yellow onion- slices
1 carton mushrooms- quartered
2-3 canned chipotle peppers
1/2 avocado- cubed
1 bunch green onions- washed/cut up
1 bunch cilantro- washed/cut up
1/4 lime
1 can black beans
1 package instant brown rice (or cook the real thing if you have time!)
less than 1tsp healthy oil (sunflower, coconut, evoo.. you pick!)

Cook the chicken, mushrooms and onions (w/oil) in pan until done.  I seasoned with garlic salt, pepper, a little fajita seasoning and cayenne pepper.

Heat beans and rice according to package directions.  When rice is done cooking, mix with cilantro and squeeze lime while still hot.  

Time to assemble.  Depending on if you like your food touching, you can mix all of your portions on the plate and have a hey day.  For me, I portioned everything out like soo...


... and then mixed it all together!  Keep your salt handy to balance out the acidity from the limes and blandness from the beans :)

I don't do resolutions, I do goals

During the first of the year, I was seeing a lot of FB posts and blogs out there bagging on making resolutions but I want to assure that this is not one of them.  If you make resolutions, more power to you.  I, on the other hand, never keep them and have thus decided to stop making them.  How many times have us ladies said "I'm going to get fit this year?" "I'm going to lose (insert absurd amount here) before (unrealistic time frame)?!  Am I right ladies, or am I right?!  ...don't worry, I'm right there with ya!


This year, instead of setting myself up for failure with my unrealistic expectations of growing 5 inches and losing 90% of my body fat I'm going to do things a little differently.  This year I will make goals.  Not all of these are weight loss/get fit goals but some of them are.  You'll notice that I started this little journey back in May and it's an ongoing battle.  I start talking about it here and dove a little into my hate/hate relationship with running, here!


I have a lot of goals for 2014 but truthfully the one I'm working on most is getting fit and losing weight to see if that will effect the baby making progress.  Oh, you have to actually see your husband to make a baby?  What?  Well... I'll do what I can while he's gone on yet another pleasure cruise with the Coast Guard- yeah right!

I started an Advocare challenge last month and am about halfway through.  **sidenote, I don't actually have trouble staying on the challenge (except for Cheerleading trips away), it's what happens AFTER I get off the challenge when I'm feeling all skinny and invincible. ... soooo not immune to calories, damn!**  Anywho!  I'm tracking my weight and inches.  So far I'm doing great!  With the San Francisco move in the very, very near future I'm a little more motivated.  All of a sudden the thought of not being able to hide behind my super cute sweaters and unlimited supply of dress/leggings/cardigan outfits is scaring the beegeesus out of me!  Nothing like the thought of public ridicule to light a fire under you!  Plus- If I'm going to be in this fabulous new city, I want to feel/look fabulous!



Now to the goals:
  • Study/Practice my Spanish more to get back up to speed!
  • Become a credit card debt free household- we're actually doing really well here!!
  • Get a bun in the oven
  • Lose 30lbs before June (already down almost 10!)
  • Travel to a foreign country that is not Mexico. 
  • Figure out if I'm going back to school for my Masters or get a job I WANT to do.
  • Grow my blog.
  • Beef up my camera skills
  • Learn how to use/master Photoshop or another editing tool

Those are my big goals for 2014!  For my fitness goals I have set up this timeline...
  • Between Jan 1- Feb 28 lose 15lbs and inches (with a vaca in there, this could be dicey!)
  • Between March 1- March 31 lose 5lbs and get down one "dress" size and start exercising
  • Between April 1- April 30 lose 5lbs and more inches and exercise consistently
  • Between May 1- May 30 lose the last 5lbs and work on keeping it off!!
I know there will be setbacks along the way and lifestyle changes but I'm confident that I can get back to a great routine and become more active!  Follow along with my progress, accomplishments and failures and as the cute little Nike app says- send me cheers along the way!!

We Did It!!

Well lovelies, we did it!  My beloved Seahawks clenched their first EVER Superbowl "W" yesterday and I couldn't be happier.  I thought the Bronco's would have put up more of a fight, but they just didn't come to play yesterday.  Oh well. 

I had this theory yesterday that I'll share with you!  If the Seahawks have the #1 Defense and the Broncos have the #1 Offense then theoretically the Broncos shouldn't have scored at all- right?  I mean if the Legion of Boom does their job (which they did) then it should have been a shut out, which it almost was.  Also, when our offense steps up (which they did) we're pretty close to unstoppable.  This was blatently evident in the final score, 43-8. 

Either way, the game was fun.  I hung out with some of my favorite Coastie ladies at a potluck while watching the game on two giant screens!  My contribution, among other things... skittles.  Boom.  If you don't know the significance, look it up.  It's actually a cute story.  Either way after getting back from our cheer/basketball trip at Ican'tbelieveI'mupthisearly o'clock, there was no cooking going on in my house.  I settled for green/blue Powerade, blue chips with green salsa, wings, cupcakes and skittles.  Today it's back on the diet bandwagon for me!


This isn't just another "W" for Seattle, it's something we've been waiting for for a LONG time!  Redemption from 2006 doesn't even begin to cover it.  We've been undersold, not thought of as a contender and always looked as a weak team and we finally proved just how awesome we are.

Great job Seattle Seahawks and keep it up 12th Man.  We earned this!!
